Opening day parade

Watch for Jim to be in the opening day parade. He's helping his uncle, Mart VanGorden of Van-G Carriage in Liberty Twp. maneuver Sally and Slim, a good looking Clydesdale team, down the parade path. Not too bad of a day for a parade.
On a farm note, we are chomping at the bite to get going in the fields, but the fields are not chomping back and our little plants in the plastic hoop house are not anywhere near ready to go into a big open, unprotected  field. So we wait and make improvements to the field plans on paper.

The help has been hired and put to work mending fences, starting seed and cleaning out the chicken coop. Last week they gradually peeled off layers of clothing until in t-shirts, this week they came to work wearing gloves and stayed in them. I'm ready for the temperature fluctuation to level off and stick at a pleasant 72 degrees.

Not everybody gets the opportunity to use cracked eggs, but I do and here's what I sometimes do with them...

Brownies
Preheat oven 350 degrees                                       Bake in a 9x13" pan for 25 minutes.

Melt 1/2 cup butter
4oz. unsweetened bakers chocolate
Let this cool before adding other ingredients.
}Mix chocolate and egg mixture together until creamed.
Beat until light in color and foamy in texture:
4 room temperature (cracked) eggs
1/2 tsp. salt

}Mix above ingredients with sugar until creamed.
Add
2 cups sugar
1tsp. vanilla
}Fold in to above mixture using as few strokes as possible.
Add
1 cup sifted flour

Bake
