Knolls News

The canopies worked great for extra shade on the field chickens, but wind and rain demolished them. I had 4 canopies, now I have 1. We're down 10 chickens, 3 canopies, one of the hired hands has decided
after last week not to return and another is considering moving a few hours north within the next two weeks. It's getting a little challenging but it's typical too. When the Massey tractor's radiator comes back from the repair shop we're going to get these fields cleaned up and plant again. Yeaaaaa!!!

So the pick up this week so far is yellow straightneck squash, garlic, small green cabbage, green beans. There maybe 1 or 2 more items.

The pickups have been wonderful despite all your challenges this year! Last week we had friends to dinner from South Africa and I made the Stuffed Broccoli leaves recipe. It was a hit and so good! Thank you! Praying for easy sailing the rest of the summer for you!

Mmmmmm...... fresh green beans sauteed in Walnut Oil with some fresh mozzeralla, tasty!

I found this recipe in a magazine and enjoyed it. It calls for zucchini, but I think yellow squash would work just as well.

Zucchini Pasta

8 oz cherry tomatoes, sliced or halved

1 clove garlic, thinly sliced

¼ c. chopped raw walnuts

2 Tbsp torn fresh basil, plus leaves for garnish

2 Tbsp extra-virgin olive oil, plus more for drizzling

Sea salt

1 zucchini, thinly sliced lengthwise, slices cut into ¼-inch-long strips to resemble noodles

In a bowl, combine tomatoes, garlic, walnuts, basil and oil. Season with salt. Let stand 20 minutes. Toss with zucchini and garnish with basil.
